Unfiltered Extra Virgin Olive Oil, 500 ml
Our everyday bottle of single-estate California olive oil: unfiltered, cold-pressed, and bold, with notes of fresh-cut grass and a peppery finish.
This is the oil we cook with every day. It comes from our family's five-acre orchard of centenarian olive trees, more than 100 years old, in Valley Springs, in the Sierra Foothills of Calaveras County. We hand-pick the olives in November and December, keep them temperature-controlled, and have them milled by Nick Sciabica & Sons within 48 hours of picking. Then we bottle the oil unfiltered so none of the flavor gets left behind.
Tasting notes: Green and grassy on the nose, smooth and fruity at first, with a gentle bitterness and a peppery tickle at the back of your throat. That pepper is a sign of naturally occurring polyphenols in fresh olive oil.
Use it for: dipping crusty bread, finishing soups and pasta, dressing salads, drizzling over grilled vegetables, fish, or steak, and everyday sautéing.

Product FAQ
- Why is it cloudy? It's unfiltered, so tiny olive particles remain. They add flavor and settle over time.
- Why does it make me cough? That peppery bite comes from natural compounds in fresh olive oil (such as oleocanthal). Many tasters treat it as a sign of quality.
- Is it organic? We don't use pesticides or herbicides, and our orchard is rain-fed, but we are not certified organic.
