Every bottle comes from one family orchard of centenarian olive trees (more than 100 years old) in Valley Springs, Calaveras County. We hand-pick in November and December and have the fruit milled by Nick Sciabica & Sons within 48 hours. Independently lab tested every harvest (December 2025: 0.15% free fatty acids, 381 mg/kg polyphenols). See what the numbers mean.
