About our olive oil
Where is your olive oil grown?
In our family's five-acre orchard in Valley Springs, Calaveras County, in California's Sierra Foothills. Every bottle comes from our own trees.
How old are your trees?
They're centenarians: more than 100 years old, according to our family's history of the orchard. They're planted about 40 feet apart in the Old World style.
Is it really extra virgin?
Yes. We have our oil independently lab tested every harvest, including free fatty acids and polyphenols. Our December 2025 test showed free fatty acids at 0.15%; California's extra virgin limit is 0.5%. See our Quality page.
Is it organic?
We farm without pesticides or herbicides, and our trees are rain-fed, but we are not certified organic.
What does "unfiltered" mean?
We bottle the oil without filtering out the tiny olive particles. It looks slightly cloudy and tastes fuller. A little sediment may settle, which is normal.
Why does it taste peppery or make me cough?
That's pungency from natural compounds in fresh olive oil, a sign of freshness.
Is it high in polyphenols?
Our oil is robust and peppery, which usually signals good polyphenol levels. Our December 2025 lab test measured 381 mg/kg total polyphenols. See our Quality page for the full results and what each number means.
Can I cook with it?
Yes, for sautéing, roasting, and baking as well as finishing. For deep-frying, many cooks use a less expensive oil.
Storage
How should I store it?
Cool, dark, and capped tightly, away from the stove and sunlight.
How long does it last?
Unopened, enjoy it by the best-by date on the bottle; it's at its best in the first months after harvest. Once opened, use it within about 2–3 months for the best flavor.
Should I refrigerate it?
No. Cold makes it cloudy and thick (it clears at room temperature), and it isn't needed.
