Walk down any grocery aisle and most of the olive oil comes from Spain, Italy, Greece, or Tunisia. Those countries make wonderful oil. But for American cooks, California olive oil has a few real advantages.
California is a small part of what Americans use
California has more than 37,000 acres planted for olive oil and over 400 growers, producing roughly 2 to 4 million gallons a harvest (industry estimates). Estimates of how much of U.S. olive oil consumption that covers range from under 2% (UC Davis, 2026) to 5–8% (Morning Ag Clips, 2025). Either way, most olive oil Americans buy is imported.
1. Freshness
Olive oil is a fresh fruit juice. It's best soon after harvest and loses flavor and aroma over time. Oil from California travels days, not months, to reach you. Buying direct from a farm gets you closest to the source.
2. Strict standards
California sets its own grade standards for olive oil. To be called extra virgin, California oil must have no more than 0.5% free fatty acids, stricter than the 0.8% international limit, and pass a tasting panel with zero defects (CDFA, 2026–27 standards). Large California handlers must test every lot through the Olive Oil Commission of California. In the 2024–25 season, 96% of reported California production graded extra virgin (OOCC Annual Report).
3. Traceability
Many big-brand oils are blends from multiple countries. Small California producers can tell you the farm, the varieties, and the harvest date.
4. A distinct taste
Dozens of olive varieties grow in California. You'll find everything from buttery, mild oils to bold, peppery ones. Many Northern California foothill oils tend toward green, grassy, and robust.
Is imported olive oil bad?
No. There are excellent imported oils, especially from producers who print harvest dates and test their oil. The point is to buy fresh oil from someone who can tell you where it came from.
How to pick the best California olive oil
- A harvest date from the latest season
- A named farm or region
- Published lab results
- Dark glass or a tin
- A flavor style you like (try a small bottle first)
